<div id="articleText">For Les Halos de Jupiter’s Philippe Cambie, “Grenache is the king of all grapes and the natural leader of all Rhone varietals.” The southern Rhone rising-star enologist makes wines for a number of famed estates, but Les Halos de Jupiter is his own project.</p>
<p>His Vacqueyras is a blend of 83 percent Grenache old vines and 17 percent Syrah from 35-year-old vines. With its intensely inky color, lush body and notes of wild herbs, deep dark fruit and spice, the 2009 shows why Vacqueyras can be such a beguiling wine ― a close relative of Chateauneuf and Gigondas, which he also makes.</p>
<p>Cambie doesn’t make much of the Vacqueyras, but right now some of it can be found at local wine shops. I’d grab a bottle and take it to any picnic or barbecue. Lay in some charcuterie or salumi, a few cheeses, and it’s an impromptu feast. Have it with burgers, with grilled ribs or a chicken fricassee with sweet peppers and tomatoes.<br />

<p>Voici une question récurrente que l’on me pose, ou peut on manger a Châteauneuf du pape ?</p>
<p>La réponse évidente est LA TABLE DE SORGUES, c’est le restaurant incontournable autour de Châteauneuf du pape.</p>
<p>Apres une quinzaine d’années a la tête du Château de la Caze**** dans les gorges du Tarn en Lozère, leur région d’origine <strong><em>Jean-Paul LECROQ et son épouse </em></strong>optent pour un changement professionnel et  familial, ils  vendent  leur  entreprise et ils ouvrent « la Table de Sorgues » ici, en Provence, à deux pas d’Avignon et à quelques kilométrés  de Chateauneuf-du-Pape, succédant à Josette &amp; Gérard Alonso, qui déjà nous régaler a chaque repas.</p>
<p>C’est dans leur maison qu’ils  vous accueillent pour vous proposer une cuisine gourmande, dans une ambiance chaleureuse et détendue, pour se sentir un peu comme chez soi, dans un esprit « table d’Hôtes ».</p>

<p>C’est une table agréable, ou l’on mange très bien, vous retrouverais des produits du terroir, et surtout une superbe carte des vins, ou l’on pourra boire, François Villard, Georges Vernay, le Clos du caillou, La Janasse, Clos mont olivet, Rayas, Clos des papes, en RHONE, mais aussi Ramonet, Roumier, Raveneau, Feveley etc.……en Bourgogne</p>

<p align="center">Assaisonner l’épaule d’agneau , la colorer en cocotte dans du beurre &amp; huile d’olives, ajouter  les citrons confits et le gingembre haché, mouiller d’eau à hauteur et cuire à four moyen (150°) bien à couvert environ 4 heures.</p>
<p>Retirer du four, laisser tiédir puis détacher les chairs, réserver au chaud.</p>
<p align="center">* Couper les tomates en 4, les épépiner, faire tomber les échalotes au beurre, ajouter les tomates (sel poivre &amp; pincée de sucre) laisser mijoter jusqu’à évaporation de l’eau de végétation et une belle consistance de compote.</p>
<p align="center">* Assaisonner la selle de sel &amp; piment d’Espelette, bien colorer au beurre et finir au four à vive température (220° &#8211; env. 15/20mn) laisser reposer, puis prélever les filets et les filets mignon, trancher et répartissez dans les assiettes, former une quenelle de la chair des épaules et dresser la en cuillère, disposez la compote de tomates dans un cercle,</p>
<p align="center">Dégraisser le plat de cuisson &amp; déglacer avec le jus d’agneau, ajouter les olives puis les anchois finement taillés et saucez les assiettes</p>

Une farandole de plaisir, de surprise et de gout.</p>
<p>Coque de foies gras avec réduction de vinaigre au agrumes, une merveilleuse coquilles saint jacques juste pochée, un saint pierre cuit a l’unilatérale sur un carpaccio d’ananas, une merveilleuse escabèches avec une langoustine juste rôtie, un ris de veau fabuleux, et surtout une recette ancestrale le carde a la truffe noire.</p>
